Our flagship morning coffee, drawn from a single lot on Prakash Estate at 1,600 metres in the western Nilgiris. Ananya Murthy processes this washed S795 on raised beds over 18 days. The cup is delicate and floral — closer to an Ethiopian washed than most Indian coffee gets.

- 1.Use 22g coffee to 360ml water at 94°C.
- 2.Grind medium-fine for pour-over.
- 3.Bloom 45 seconds with 60ml, then pour in three stages.
- 4.Total brew time 3:00–3:30.
